Speaking of seaweed...I forgot how much I like nori, which is basically sheets of dried seaweed all perforated and ready to hug your sushi fixins. Yesterday, I freaked some people out with the raw vegan tuna. It's made primarily out of soaked sunflower seeds and seaweed. But for someone who's given up meat all month and could use a little bit of familiar texture and flavor suggestive of an Amurican staple, it's not only "not bad" it tastes amazing.
Almost a week down into my raw vegan diet and I feel pretty good. I have to admit, I'm going to have to cut back on the recipes because as Mak warned, they do add up. But I feel pretty well stocked and can try and stretch out my sauces and such this week. Also, recipes heavy on coconut oil give me a little bit of heartburn...even the coconut water I'm drinking right now, so I may have to chill on that for a minute or figure out how to use it in more moderation (not so many coconut oil heavy recipes). Coconut is full of saturated fat so I may be reacting to that.
Other than that, survey says: BRING ON WEEK 2! And sprinkle it with savory sweet seaweed!
