In the meantime, while salads are definitely nomnom worthy, tonight, I was like, I NEED comfort food after a long day and no vices to come home to except for the tail-end of a Beyonce concert on TV, so I went with sketti. I have a Spriooli slicer and found a good raw mater sauce I literally whipped up in like a minute in the food processor. The sauce turned out a bit light, so I probably should have thrown in more sundried maters, but I made up for it in garlic? I looooooove garlic. I also literally just ate an entire zucchini for dinner, if for no other reason than to prove to P. Smith that I do not have the same palette as Buddy the Elf. Huzzah!
Another boon today was the green thickie recipe I finally got around to taking out for a test nom:
1 cup of oats (soaked in water in the Vita)
2 cups of spinach
2 frozen nanners
7 pitted dates
2 Tbsp almond butter
2 Tbsp (heaping) unsweetened cocoa powder
Blend, baby, blend.
The result is a VERY thick thickie...this is NOT, i repeat, NOT a smoothie. This bad boy lasted the entire day between two 16 oz. glass drink jars I re-purposed from some tea I got from Whole Foods. It thickens in the fridge even more, almost to mousse or puddin. I'm still not done! And is not great if it warms even a little texture wise. But this will certainly become a daily staple for me. Especially during finals when like six hours will go by and I'll have not eaten anything all day except words. With my eyes. Tomorrow...I'm massaging kale leaves!
